Don’t be afraid to use your larger dinner plates for smaller portions, remember, the more negative space THE BETTER! Keep it simple, keep it elegant, overcrowding negates both of those goals.

This is so simple but let me tell you why, plate your fruit in a half moon shape around the rim of the plate. If your plate is a clock, thin it out at 12 and 6. Beef it up a bit at 3 o’clock. Use varying colors adjacent to other contrasting colors, break it up with dark and light colors so the eyes are playfully digesting the dish visually.
