So I see a lot of comments such as “oh well I could never plate like that for more than two people without the food getting cold”… and this is a concept and skill I practice a tremendous amount at home!I may sound like a broken record, always driving home the importance of Mis en Place, but this will be the biggest key to unlocking a very organized, rapidly executed plating assembly line.What do I mean by this? It means that for every component of my dish I have a utensil like a spoon or culinary tweezers that help me put that component onto the plate quickly. I’m not searching in a drawer for tongs, they’re already sitting next to the ingredient ready to be used. I have ingredient and tool I need out in front of me, my parsley (garnishes) are pre-picked and sitting on a moist paper towel.I have my sauces in squeeze bottles (use a funnel). And I have my meat prepped exactly how it’s going to go on the plate.And finally, have a plan! Think about it in your head how each component of the dish is going to sit on the plate, how are all of the ingredients going to marry together to create beautiful flavors, textures, and visual appeal?? Practice at home so you’re ready for in the aircraft galley 🛩✨

Color Coordinated Canapés 💕Mediterranean flavors of Watermelon radish stamped out, lemon/beet hummus kalamata olive and feta cheese garnished with a pea sprout.I prep my catering by having everything I need for that dish in one meal-prep container or gallon size ziploc bag, that way when it’s time to assemble, I am not scrambling looking for a missing ingredientIf you keep your plating petite- you’re one step ahead already of making it look elevated and elegant

What do I bring with me on aircrafts that normally do not fly with a CFA? •MyDrap napkins•my own silver trays•culinary tweezers•a few ziploc bags•hot towels for guest countIt’s enough for me to add an elevated experience without schlepping my whole tool kit. The Art of the Welcome Table [part deaux] at @aircareinternational Utilizing a “fish bowl” style vase and delicately layering calla lilies around the circumference, you create a modern, elegant, and quiiiiiick floral arrangement. Additionally, adding rocks to the bottom of the vase creates a more gravity centered weight allocation to prevent it from falling over We took the eggplant colored callas and drew inspiration in the form of a beet cold pressed juice, goat cheese canapé, and raspberry macaroonsThank you @aircareinternational for the opportunity to present and showcase these new ideas to the CFA/FAT community!

Flightess Culinary Training with @sunairjets  in Camarillo a few weeks ago✨🛩Culinary Pro-Tip: Food should like like it “fell from heaven”, the moment your plating starts to look slightly over-handled/manipulated, it will look poorly appetizing. It’s having the right amount of fine dining touch with enough restraint and boundaries as you garnish and prepare.
